Meet Morgan Mole
When you first meet Morgan, he just asserts positivity and maturity. At 21, he has the advanced skills of someone twice his age!
Growing up in Leigh (Lancashire) and then Tyldesley (Manchester), Morgan knew from an early age what he was passionate about, and that was food! He fondly remembers in high school making a roulade with (he quotes, ‘badly tempered’) homemade chocolate leaves, he knew they weren’t great but just fell in love with the process of baking. Morgan is already on his way to his big dreams, with his very own bakery in the making! He also planning at least another 2 tearooms in the future! If you ever get the chance to meet Morgan, with his super bubbly and ambitious personality, you know this dream will become a reality!
We sat down with him and asked where his inspirations come from and why he’s so passionate about cooking.
Who is your ultimate hero?
Pierre Herme or Antonio Bachour. Although there are many great pastry chefs to choose from!
On a more personal level – my Mum!!
What’s your favourite cuisine?
I love simple British classics, sausage and mash, fish and chips, just wholesome hearty food!
What do you consider your greatest achievement so far?
Setting up my own business whilst still working and pushing to do better every day.
What’s the most important possession you own?
A Pastry Scraper! I couldn’t do a day without it. Such a small and inexpensive piece of equipment but I use it for everything. (It’s essentially a thin rectangle of bendy plastic)
What is your idea of the perfect day?
To have a good sleep and have a lie-in! Bake from lunch to early afternoon and then spend time with family and friends.
Your favourite ingredient in the kitchen to use?
Chocolate! There are so many things you can do with it. Not just to flavour things but to be able to mold and create shapes.
In contrast, what do you consider the most overrated ingredient?
I see Yuzu being used a lot in Pastry work and desserts – I just don’t see the hype.
If your friends describe you in one word, what would it be?
What do you value most in people?
Loyalty and trust.
Where is your favourite place in the world?
What do you think are the essential qualities that make a good chef?
Good attitude, eagerness to learn and develop and determination.
What do you have in your fridge at home?
Nothing out of the ordinary. Milk, butter, eggs, chicken, vegetables, meat – nothing special.
What is your most common phrase?
What is your state of mind when cooking?
Consistency – making sure it’s the same as last time (obviously after perfecting it previously).
Where would you love to visit in 2020?
Paris! Not too far away. I’d love to see all their pastries and bakeries.
